This is an industry that has a lot of room for people who belong to marginalized communities, or who might hold leftist points of view, and I think, because of that sort of predisposition, some people might not understand just how discriminatory this industry is and how that’s a broader reflection of just how unaccommodating America itself can be for marginalized communities. Why do you think the mainstream American food industry has been so slow to recognize the import of women of color and immigrant women in particular? I think that, at least from my vantage point, this industry attracts a lot of people who like to think of themselves as apolitical in some way, or who at least shy away from discussing politics.

It’s my hope that people, especially those from marginalized communities, will not have to work under such constraints just to express themselves in the full creative terms that they’d like. Now, though, I believe people who think that way tend to be a bit more sly about it, whereas just a few decades back, they were out in the open. There is so much discrimination embedded in the American food media today.

That sort of casual dismissal of an entire language of cooking from a specific part of the world is just flagrantly racist to me. There’s one article I found, as late as the ’90s, in which the writer said that Jamaica does not leap to mind immediately when he thinks of great food. The book’s final chapter is on Norma Shirley, a Jamaica-born chef and restaurateur, and as I was researching that chapter, I came across so many articles in the American food media about Caribbean food that were just nakedly discriminatory and racist. Yes, there was quite a bit that really shocked me.

I felt that the best way to do that within my extremely limited skill set, as a storyteller, was to write a series of biographical essays. The idea floating around the American food media was that immigrants-and their value and worth in this country-were being determined by their productivity, and I really wanted to write against that, especially as someone who is the child of immigrants and also belongs to marginalized communities as a queer person of color. I saw editors and magazines peddling these ideas that were essentially “immigrants feed America” and “immigrants get the job done.” However well intentioned those talking points may have been, I found them so harmful, because it felt as though immigrants themselves-and their labor-were being decentered in favor of a perspective that has prevailed for so long in American food media: that of a middle- to upper-middle-class white consumer. Were there any misconceptions about immigrants and food in America that you wanted to try to correct with this book? From 2017 to 2018 I saw so many talking points from prominent food publications that really troubled me.
